Creating Baby Food with Quinoa

Quinoa (“keen wah”), an ancient grain, is a complete protein. The Incas called it the “mother grain”. Don’t overcook quinoa or you’ll end up with mush-like goo. Basic recipe:
  • 1 cup quinoa
  • 2 cups of water
Directions: put quinoa in saucepan, add water and bring to boil. Cover, reduce heat to low and simmer 15 minutes to tender stage. Smashed Banana Quinoa You’ll need:
  • 1 cup Quinoa – cooked
  • ½ cup Yogurt – plain
  • ½ Banana
  • Dash of cinnamon
Directions: Mash banana in a bowl. Stir in quinoa and yogurt. Sprinkle cinnamon on top. About two servings. Variations: Substitute nutmeg, ginger or vanilla for cinnamon. Use cooked mashed apples, peaches or apricots instead of banana. Experiment with various flavored yogurts, such as strawberry, blueberry or cherry.
